My brother-in-law works at a warehouse that specializes in frozen foods. When there's a shipment that's too close to its expiry date. Or a pallet that falls over and gets dented - then the employees get to take the goods home for free. Which means that last week he gave us a box of spirulina smoothies, a dozen tubs of Greek yogurt, ten jugs of concentrated lemon juice, and assorted containers of cottage cheese, cream cheese and more. What a treasure trove of delight! Especially for someone who likes to bake. We all sampled the greek yogurt and made 'yuck' faces. It was not to our liking - but then i surfed for recipes and VOILA - Cheesecake! (Courtesy of BakingBites.com. Some wonderful recipes there.) I've never made cheesecake before but when you got all the ingredients for free..well, what the heck!? I tried it. It was disgustingly quick and easy. And it worked. We dined on divine cheesecake last night. And it was a healthier option thanks to the greek yogurt.

Yogurt Cheesecake FOR LAZY, IMPATIENT COOKS LIKE ME.
8-oz cream cheese, room temperature ( thats one of those Philly cream cheese pkts.)
16-oz Greek-style yogurt, room temperature ( thats TWO cups)
1 cup sugar
4 large eggs, room temperature
1 tbsp vanilla extract
pinch salt
Just beat it all up until smooth and then pour into a prepared cookie crumb crust OR can even bake without a crust and eat it like that. The recipe for the crust is here: ( I used malt biscuits cos thats all i had.)
Graham Cracker Base
1 1/4 cups graham cracker crumbs
3 tbsp sugar
4 tbsp butter, melted
Im rating this recipe FIVE gold stars for speed, ease and deliciousness. Even total nitwits could make it successfully. ( I mean, heck - I did it.)
